Here is a delicious way to jar that sweet summer tomato flavor! Fresh tomatoes are chopped and mixed with onions, jalapeños, sugar and spices then slow simmered for an incomparable sweet and savory taste.
Have surplus tomatoes and don't know what to do? Make some savory spicy sweet tomato jam! It's the perfect topping for vegan cheese and crackers, it's great slathered on a vegan burger or warmed inside a grilled cheese sammie.
- 2 ½ pounds fresh tomatoes seeded and chopped
- 1 ¼ cups sugar
- ¼ cup apple cider vinegar
- 1 small sweet onion diced
- 1 jalapeño seeded and minced
- 1 tbsp sea salt
- 1½ tsp allspice

Combine all ingredients in a ceramic or other heavy bottomed pot.

Heat to boil, then turn down to simmer, uncovered.

Stirring occasionally, keep at simmer for about two hours until there is a visible path across the bottom of the pan for a couple of seconds when you drag a spoon across it.

Pour contents into a clean jar.
