Vegan, oil-free, gluten-free and loaded with flavor, this chickpea salad is hands down the best!
Servings: 4 servings
Ingredients
- 1 can (15 ounce) garbanzo beans (chcikpeas) drained, reserve liquid for another use
- 2 stalks celery diced
- 1 medium shallot minced
- 1 tbsp sweet pickle relish
dressing
- 1 tbsp tahini paste
- 1 tbsp fresh lemon juice
- 1 tsp rice vinegar
- 1 tsp (or less) celery salt
- 1/2 tsp dry mustard
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Instructions

Mix chickpeas, celery, shallot at relish in a medium bowl and lightly mash.
In a small jar combine remaining ingredients. Shake well.
Pour dressing over chickpea mixture. Toss well.
